Hello there and welcome to my little corner of the internet! My name is Kelsey, lover of all things food and wine (and coffee). Running keeps me sane and my pups, Badger and Pippa, make me happy. I recently got married to the love of my life, Geoffrey, and he keeps me centered.
As long as I can remember I have had a strong connection and relationship with food. I am passionately in love with food. I dream of what I am going to eat for breakfast, and as soon as I wake up I am already thinking about what we are going to eat for dinner. During the day I am constantly daydreaming of new and exciting recipes.
With that being said I have always struggled with finding a healthy balance in my eating habits.
Have I been obsessive about my eating and counting calories? Absolutely.
Tried an extreme diet? Check.
Cut out all carbs? Been there.
Think going vegan is the answer? Guilty.
And that time I decided the whole “Eat Right For Your Blood Type” craze was the answer and donated blood simply to find out what my blood type was…
As you can see, I have dabbled in it all. I started down the path of truly trying to find a balance in my diet when I met my husband. You see, in some ways we are total opposites. Country boy meets city girl type of scenario. He grew up on meat and potatoes, and I grew up on tofu stirfrys. When we started dating I found how fun it was to be completely indulgent in the kitchen. And guess what??? I found I was living my healthiest life by just following the whole “checks and balances” system.
Utterly indulgent nutella pancakes for breakfast? Hell yes! I’ll just have a big green salad for lunch followed by shrimp lettuce wraps for dinner.
Football Sunday tailgate with wings, chips and queso and probably something sweet to top it off? It happens. I’ll just start my day with a long run followed by a green juice for breakfast.
A couple glasses of wine? It happens all. the. time.
My point is, I have found that not only is balance possible, but it works! Now I will say, finding balance is a constant work in progress, not only in regards to my eating but life in general. Here, on Forking Scrumptious, you will find my favorite “balanced recipes”, along with everything that comes with my journey in attempting to lead a balanced life. It’s not always pretty, but I promise it is always delicious and 100% real.
