This lightened up, protein packed BLT lettuce wrap is everything. By using rotisserie chicken this can be thrown together in 15 minutes and is super satisfying for lunch, dinner or even a pre/post work snack.

I don’t know about you, but December was a total nosh fest for me. Too much cheese, too many sweets and WAY too much vino. But I do have to say, it was all 100% worth every bite and sip.
Now that the marathon of indulgence is over, it’s time to come back to reality. January has historically always been my reset month. I try to eat as clean as possible with little to no booze. In the past I have usually attempted to do the Whole30 program, but this year I decided to approach things a bit differently, which brings me to the dreaded subject of New Year’s resolutions.
In the past my resolutions have gone more or less like the following:

It was super fun and exciting while it lasted, but I decided I put unrealistic expectations on myself and I am kind of over it.
So, this year I made the decision that I am not going to make any extreme moves. Instead of putting pressure to stick to a ton of New Year’s resolutions we both know I am never going to keep, I came up with one simple resolution: to do things that make me happy. I feel that if I spend all of 2018 making specific moves in my relationships, career, eating habits, exercise regime, and hobbies that genuinely fill me with joy I will be living my best life. In regards to eating, I tend to be happier when I eat unprocessed, whole foods still full of flavor.
Now that we have that out of the way, let’s talk about these Chicken BLT Lettuce Wraps that DEFINITELY bring me joy. A simple BLT is one of my all time favorites! Also, who doesn’t love anything to do with bacon?! This version has become one of my go-to meals because it is super satisfying, but I lightened it up by losing the bread and using lettuce wraps. I also ramped up the protein by adding rotisserie chicken breast meat.
I regularly enjoy these for lunch, dinner or even a pre/post workout snack. Also, if you are looking for a fun and interactive dinner you can even do a “build your own BLT bar”.
- 6 romaine lettuce leaves
- 2 rotisserie chicken breasts shredded, any chicken breast works
- 4 slices cooked bacon, crumbled
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 3 tablespoons spicy mayo
- 2 tablespoons mayonnaise, we use Sir Kensington's because it is our favorite minimally processed mayo (try their vegan version as well, promise you won't be able to taste the difference)
- 1 teaspoon Sriracha
- Fill each lettuce leaf with shredded chicken, bacon, avocado and tomatoes
- Drizzle with spicy mayo and ENJOY!
- Combine mayonnaise and sriracha and stir together until well combined. The texture will be thinner than the original mayonnaise.
