This Cucumber and Tomato Salad might look simple, but it is anything other than basic. Tangy, sweet, spicy, cool and crunchy, this salad has everything you are looking for on a hot summer day.
This modern take on a southern classic is a summertime favorite in my household.
Geoffrey grew up in a small town in south Georgia and was raised eating cucumbers and vinegar. One of the first times he took me home his mother had a huge container of it sitting in the fridge, and from then on I was hooked. If you have never tried it, there is really nothing better than super cold cucumbers and vinegar when it is 97 degrees outside.
I have been working on my own take of this southern classic for a while, and I finally came up with this Cucumber and Tomato Salad. It has all of the refreshing notes of the original, but with a little more “oomph” to it.
The tomatoes add a little sweetness to balance the tang of the vinegar, the chives add a little more complex flavor and the red pepper flakes add the perfect amount of heat.
OMG, I seriously could eat this every day of summer and never get bored. It’s so incredibly simple, but so dang delish!
So you might be wondering why I created this recipe for only one serving, and the reason is I want you to be able to make this just for yourself as an easy snack or be able to easily batch it up for a crowd; it is much easier to batch up a recipe versus scale it down.
Make it once, and I promise you will be addicted. During summertime I pretty much always have a Tupperware full of vinegar cucumbers ready to go for whenever the craving hits me.
- 1 cup sliced cucumbers
- ¼ cup white distilled vinegar
- ½ tsp agave nectar
- Salt to taste
- 1 cup grape tomatoes, halved
- 1 tsp chives
- ¼ tsp red pepper flakes
- In a small mixing bowl stir together the vinegar and agave nectar until well combined. Add in cucumbers and season with salt. Cover bowl with saran wrap and refrigerate for a minimum of 1 hour, but up to 3 days.
- Remove marinated cucumbers from refrigerator and add in grape tomatoes, chives and red pepper flakes and give it a quick stir.
- Serve immediately.
