This peach and goat cheese salad is straight up magic. With spicy arugula as it’s base, it is layered with sweet peaches and tangy arugula. If you love peaches, you are going to live for this salad!
Ok, so by now you can probably tell that I am a big fan of light and fresh salads. This peach and goat cheese salad is a masterpiece that I can up with last summer, and I literally make it at least twice a week when peaches are in season.
The spiciness of the arugula is perfectly balanced with the sweet and the tangy goat cheese. YUM! I’m smiling just typing about it.
This salad is perfect on it’s own as a start to your meal, or is fantastic topped with a protein such as steak, pork or ever shrimp!
I have served it with a a number of dressings, but it is best with my honey lemon dressing!
- 6 cups baby arugula
- 2 peaches, segmented
- ⅔ cup goat cheese, crumbled
- 2 tablespoon chives, chopped
- 4 tablespoons honey lemon dressing
- Toss all ingredients in a large bowl and drizzle with honey lemon dressing.
- Serve immediately
