This super-crunch salad is full of zest, packed with flavor, and involves a ton of parmesan cheese. #WINNING. But in all seriousness, it really is the total package. With only 7 ingredients, INCLUDING the homemade dressing, you can have this simple and delicious creation on the table in 5 minutes, easy. I don’t know about you, but I consider that a pretty major win.
The base of the salad is Trader Joe’s “Cruciferous Crunch Collection” and is the perfect combination of kale, brussel sprouts, broccoli, green cabbage and red cabbage. I recently discovered this salad blend and can officially say I am OBSESSED. Not only is the texture over-the-top-fabulous but this particular blend is packed with Vitamin C, Vitamin A, and Potassium.
Don’t feel like going to the grocery store or don’t have a Trader Joe’s near you? No sweat. Just use any mixed greens you have in the fridge. Arugula, shaved brussel sprouts, romaine lettuce will all work great in this recipe as well.
Now, onto the vinaigrette. It’s super simple and one of my go-to dressings. Five basic ingredients and, WHAM!, you are done. Tangy, light, and super versatile this dressing is sure to become one of your favorites.
This salad is perfect as a starter followed by pizza, or as a main topped with shrimp or a breaded chicken cutlet. Participating in “Meatless Mondays”? Try throwing in some cooked brown rice or quinoa to make it more filling. I use that trick for a quick lunch on the regular.
My point is this recipe is pretty much fool-proof, and is one you should always keep in your back pocket.
- 1 10-ounce package of Trader Joe's Cruciferous Crunch Blend, or any crunchy salad blend
- ⅓ cup grated parmesan cheese
- ¼ cup olive oil
- Juice of one lemon
- 1 tablespoon dijon mustard
- Salt and pepper to taste
- Place Trader Joe's Cruciferous Crunch Blend in a large salad bowl, top with grated parmesan cheese and combine with dressing
- Whisk together all ingredients thoroughly until well combined
