This creamy, dreamy tomatillo avocado salsa is ALL THE THINGS. It’s got plenty of tang, a nice kick, and so much creaminess.
Can we just all admit that Cinco de Mayo is one of the best celebrated days of the year? Seriously, I put it up there with Thanksgiving, Christmas, Hanukkah… ALL the fun holidays. Who doesn’t love a day where you get to eat all of the chips, salsa, queso and tacos you want, AND right before bikini season. #WINNING
Now don’t get me wrong, I love a well made classic salsa. But this salsa with roasted tomatillos blended with creamy avocado definitely is my favorite. I can’t make enough of it, it always seems to disappear.
It’s got the tang from the tomatillos, creaminess from the avocado, plenty of kick from the jalapeños and a beautiful freshness from the cilantro. Pretty much, it’s the only salsa you’ll ever need in your life.
Besides with chips I love it on tacos, over enchiladas or even in place of a salad dressing. Give this salsa a shot and I promise you will be hooked!
- 10 tomatillos
- 3 cloves of garlic, peeled
- 2 jalapenos
- 1 tbsp olive oil
- ½ tsp salt
- ½ cup cilantro
- 1 avocado
- Preheat oven to 350
- Line bakings sheet with tinfoil layout tomatillos, garlic cloves and jalapeños. Then coat everything with olive oil.
- Roast for 40 minutes
- Combine all ingredients in a food processor and pules until nice and smooth, about 3 minutes.
